Instructions
- In a mixing bowl, combine softened cream cheese, sugar, and vanilla extract. Beat until smooth and creamy.
- Lay an egg roll wrapper on a flat surface. Place about two tablespoons of the cream cheese mixture in the center, followed by a spoonful of cherry pie filling.
- Fold the bottom corner over the filling, tuck in the sides, and roll tightly to seal.
- Heat vegetable oil in a deep skillet over medium-high heat until it reaches about 350°F (175°C).
- Fry the egg rolls in batches for about three minutes per side until golden brown. Drain on paper towels.
- Serve warm with extra cherry pie filling drizzled on top.
