Ingredients
  

For the Artichokes
  • 4 Artichokes Trimmed and cleaned
  • 2 cups White wine For braising
  • 1 cup Vegetable broth
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Cashew Aioli
  • 1 cup Cashews Soaked
  • 1 clove Garlic Minced
  • 1 tablespoon Tarragon Fresh, chopped
  • 1 tablespoon Mandarin juice Freshly squeezed
  • 2 tablespoons Water To thin the aioli

Method
 

Prepare the Artichokes
  1. Trim and clean the artichokes, removing any tough outer leaves.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the artichokes and sauté for a few minutes until they start to brown.
  4. Pour in the white wine and vegetable broth, then season with salt and pepper.
  5. Cover and simmer for about 45 minutes until the artichokes are tender.
Make the Cashew Aioli
  1. In a blender, combine soaked cashews, garlic, tarragon, mandarin juice, and water.
  2. Blend until smooth and creamy, adjusting water for desired consistency.
Serve
  1. Plate the braised artichokes and drizzle with cashew aioli.
  2. Garnish with additional tarragon if desired.

Notes

For best results, soak cashews for at least 2 hours before blending.
