Whipped Ricotta Pear Crostini with Hot Honey

Ingredients
  

  • 1 long artisan French baguette, sliced into 1/2-inch diagonal rounds (about 12-16 slices)
  • 3 tbsp extra virgin olive oil
  • 1/4 tsp fine sea salt
  • 1 1/2 cups whole milk ricotta cheese (drained of excess whey)
  • 1 tbsp extra virgin olive oil
  • 1 tsp fresh lemon zest
  • 1/2 tsp flaky sea salt (plus extra for finishing)
  • 1/4 tsp freshly ground black pepper
  • 2 medium ripe firm pears (such as Bartlett, Bosc, or Anjou), cored and thinly sliced into half-moons
  • 1/3 cup raw walnuts or pecans, roughly chopped and lightly toasted
  • 3 tbsp hot honey (pure honey infused with chili flakes)
  • 1 tbsp fresh thyme leaves (stripped from stems)

Method
 

  1. Preheat oven to 400°F (200°C). Arrange baguette slices in a single layer on a large rimmed baking sheet. Brush both sides lightly with olive oil and sprinkle with a pinch of fine sea salt.
  2. Bake for 7 to 9 minutes, flipping halfway through, until the crostini are golden brown and crisp around the perimeter with a slight chew in the center. Transfer to a cooling rack.
  3. In a food processor or blender, combine the drained whole milk ricotta, 1 tablespoon olive oil, lemon zest, flaky sea salt, and black pepper. Process on high speed for 60 to 90 seconds until luxuriously light, velvety smooth, and completely lump-free.
  4. Generously smear 1 to 2 tablespoons of the whipped ricotta onto each cooled crostini slice, using the back of a spoon to create rustic swoops and swirls.
  5. Fan 2 to 3 thin pear slices over the whipped ricotta. Scatter the toasted chopped walnuts evenly over the top.
  6. Drizzle each crostini generously with warm spicy hot honey. Garnish with fresh thyme leaves and a tiny pinch of flaky sea salt. Serve immediately!
