Ingredients
  

Cupcake Batter
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 cup butter softened
  • 2 large eggs
  • 1/2 cup watermelon puree
  • 1 tsp vanilla extract
Frosting
  • 1 cup cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup watermelon chunks for topping

Method
 

Prepare Cupcakes
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and baking powder.
  3. Add softened butter and mix until crumbly.
  4. Beat in eggs, watermelon puree, and vanilla extract until smooth.
  5. Pour batter into muffin tin and bake for 20 minutes.
Prepare Frosting
  1. In a bowl, beat cream cheese until smooth.
  2. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  3. Once cupcakes are cooled, frost them and top with watermelon chunks.
