  • 2 tbsp cornstarch thickens bubbly juices
  • 1.5 tsp ground cinnamon
  • 0.25 tsp freshly grated nutmeg
  • 1 tbsp fresh lemon juice brightens apple acidity
  • 1.5 cups all-purpose flour for biscuit cobbler topping
  • 0.25 cup granulated sugar for biscuit dough
  • 1.5 tsp baking powder
  • 0.5 tsp fine sea salt
  • 6 tbsp cold unsalted butter cubed small
  • 0.66 cup cold buttermilk or heavy cream
  • 1 tsp pure vanilla extract

  1. Prep Oven & Spiced Apple Filling: Preheat your oven to 375°F (190°C). Grease a 10-inch cast iron skillet or a 9x13-inch baking dish with butter. In a large mixing bowl, toss the sliced apples with dark brown sugar, 1/4 cup granulated sugar, cornstarch, ground cinnamon, nutmeg, lemon juice, and pure vanilla extract until every slice is evenly coated in spiced sugar. Transfer the apples into the prepared skillet, arranging them into an even layer.
  2. Mix Cobbler Biscuit Dough: In a separate medium bowl, whisk together the flour, 1/4 cup granulated sugar, baking powder, and sea salt. Add the cold cubed butter. Use a pastry blender or your fingertips to work the butter into the flour until coarse crumbs form with pea-sized butter bits remaining.
  3. Form Drop Biscuits: Pour in the cold buttermilk and vanilla extract. Stir gently with a fork just until a soft, shaggy dough forms—do not overwork the dough to keep biscuits light and fluffy.
  4. Assemble Skillet: Using a large cookie scoop or two spoons, drop 8 to 10 generous dollops of the biscuit dough evenly across the top of the spiced apples, leaving small spaces between for the cinnamon caramel juices to bubble up. Sprinkle the tops of the dough generously with coarse turbinado sparkling sugar.
  5. Bake to Golden Perfection: Bake at 375°F for 40 to 45 minutes until the biscuit topping is deeply golden brown, cooked through in the center, and the brown sugar apple juices are bubbling vigorously around the edges. (If biscuits brown too quickly, tent loosely with foil during the final 10 minutes).
  6. Rest, Scoop & Serve: Let the cobbler cool for 10-15 minutes so the bubbling caramel juices thicken slightly. Spoon warm into dessert bowls and crown immediately with large scoops of cold vanilla bean ice cream. Watch the ice cream melt into creamy rivulets over the warm spiced apples!
