Ingredients
  

  • 4 lbs sugar pie pumpkin halved, seeded, and roasted (or two 15-oz cans pure pumpkin puree)
  • 2 tbsp extra virgin olive oil divided
  • 2 large shallots finely diced
  • 4 cloves garlic minced
  • 1 tbsp fresh sage leaves finely chopped
  • 1 tsp fresh thyme leaves
  • 4 cups vegetable broth low-sodium (or halal chicken broth)
  • 1 cup full-fat coconut milk or heavy cream for dairy option
  • 0.25 tsp ground nutmeg freshly grated preferred
  • 0.5 tsp smoked paprika for subtle warmth
  • 1 tsp fine sea salt plus more to taste
  • 0.5 tsp freshly cracked black pepper
  • 0.25 cup roasted salted pepitas (pumpkin seeds) for crunch
  • 2 tbsp coconut cream or heavy cream for swirling

Method
 

  1. Roast the Pumpkin: Preheat your oven to 400°F (200°C). Slice sugar pie pumpkins in half and scoop out the seeds and stringy pulp. Brush the cut flesh lightly with 1 tablespoon of olive oil and place cut-side down on a parchment-lined baking sheet. Roast for 35 to 40 minutes until tender when pierced with a fork and edges are caramelized. Cool slightly and scoop out the flesh. (Shortcut: skip roasting and use two 15-ounce cans of 100% pure pumpkin puree).
  2. Sauté Aromatics: In a large heavy Dutch oven or soup pot over medium heat, warm the remaining olive oil. Add the diced shallots and cook for 4-5 minutes until soft, translucent, and sweet. Stir in minced garlic, chopped fresh sage, and thyme leaves, cooking for 60 seconds until fragrant.
  3. Simmer the Soup: Add the scooped roasted pumpkin flesh (or canned puree), vegetable broth, ground nutmeg, smoked paprika, fine sea salt, and black pepper. Stir well and bring to a gentle simmer. Reduce heat to low, cover partially, and let simmer for 15 minutes to allow the roasted flavors and herbs to infuse completely.
  4. Blend Silky Smooth: Remove the pot from heat. Using an immersion hand blender, blend the soup until completely velvety, silky-smooth, and glossy. Alternatively, transfer the soup in careful batches to a high-powered countertop blender. Pour in the full-fat coconut milk (or heavy cream) and stir to combine. Return to low heat for 2-3 minutes to warm through.
  5. Garnish & Serve: Ladle the warm velvety soup into shallow ceramic bowls. Create an artistic swirl of coconut cream over the surface, scatter crunchy roasted pepitas across the center, finish with a drizzle of olive oil and cracked black pepper, and serve hot with crusty sourdough bread.
