Vegan Mini Lemon Tarts

Ingredients
  

Crust
  • 1 cup almond flour
  • 2 tablespoons coconut oil melted
  • 2 tablespoons maple syrup
  • 1/4 teaspoon salt
Filling
  • 1/2 cup cashews soaked
  • 1/4 cup lemon juice
  • 1/4 cup coconut cream
  • 1/4 cup maple syrup
  • 1 teaspoon lemon zest

Method
 

Prepare the crust
  1. In a bowl, mix almond flour, melted coconut oil, maple syrup, and salt until combined.
  2. Press the mixture into the bottom of tart pans.
  3. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes.
Make the filling
  1. Blend soaked cashews, lemon juice, coconut cream, maple syrup, and lemon zest until smooth.
Assemble the tarts
  1. Pour the filling into the cooled crusts and refrigerate for at least 2 hours.
  2. Serve chilled, garnished with lemon slices if desired.
