Vegan Jackfruit Tamales

Ingredients
  

Tamale Dough
  • 2 cups masa harina
  • 1 cup vegetable broth
  • 1/2 cup coconut oil melted
  • 1 teaspoon baking powder
  • 1 teaspoon salt
Jackfruit Filling
  • 1 can young green jackfruit drained and shredded
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup corn
  • 1 cup black beans cooked

Method
 

Prepare the Dough
  1. In a mixing bowl, combine masa harina, vegetable broth, melted coconut oil, baking powder, and salt. Mix until a dough forms.
  2. Cover the dough and let it rest for 30 minutes.
Prepare the Filling
  1. In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  2. Add shredded jackfruit, cumin, chili powder, corn, and black beans. Cook for 10 minutes, stirring occasionally.
Assemble the Tamales
  1. Take a corn husk and spread a portion of dough on it. Add a spoonful of jackfruit filling in the center.
  2. Fold the sides of the husk over the filling and tie with a strip of husk or kitchen twine.
Steam the Tamales
  1. Place tamales upright in a steamer and steam for about 60 minutes, or until the dough is firm.
