Ingredients
  

Cake
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup almond milk
  • 1 tsp baking powder
  • 1 tsp vanilla extract
Filling
  • 1 cup vegan ricotta
  • 1/2 cup powdered sugar
  • 1 tsp cinnamon
  • 1/4 cup chocolate chips
Topping
  • 1/4 cup vegan whipped cream
  • 2 tbsp chocolate shavings

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, and vanilla extract.
  3. Gradually add almond milk and mix until smooth.
  4. Pour the batter into a greased cake pan.
  5. Bake for 30-35 minutes or until a toothpick comes out clean.
Prepare the Filling
  1. In a bowl, mix vegan ricotta, powdered sugar, cinnamon, and chocolate chips until well combined.
Assemble the Cake
  1. Once the cake is cooled, slice it in half horizontally.
  2. Spread the filling evenly on the bottom half of the cake.
  3. Place the top half back on and refrigerate for 30 minutes.
  4. Top with vegan whipped cream and chocolate shavings before serving.
