Ingredients
  

Artisan Cheeses (3 to 4 Textures)
  • 1 wheel (8 oz) French double-cream brie soft-ripened, served at room temp
  • 7 oz aged sharp white cheddar hard cheese, cut into rustic bite-sized shards
  • 6 oz smoked Dutch gouda semi-hard cheese, sliced into triangles
  • 1 log (4 oz) fresh goat cheese (chèvre) rolled in dried cranberries and crushed pecans
Halal Cured Meats & Proteins
  • 4 oz halal beef bresaola or cured beef thinly shaved, folded into ribbons
  • 4 oz smoked roasted halal turkey breast thinly sliced and rolled
Autumn Fruits & Berries
  • 1 large cluster red seedless grapes cut into small grab-and-go bunches
  • 6 fresh black Mission figs halved lengthwise
  • 1 Honeycrisp apple thinly sliced brushed with lemon water to prevent browning
  • 1/2 cup pomegranate arils for jewel-toned ruby pops of tartness
Nuts, Dips, Crackers & Garnishes
  • 3/4 cup candied spiced pecans or walnuts
  • 1/2 cup Castelvetrano green olives placed in a small ceramic bowl
  • 1/3 cup fig spread or spiced apple butter in a small serving dish with spoon
  • 1/4 cup raw honeycomb or amber honey with wooden honey dipper
  • 1 box assorted artisan crackers rosemary crisps, water crackers, and seeded wafers
  • 4 sprigs fresh green rosemary for fragrant holiday greenery

Method
 

Step 1: Anchor with Bowls & Cheeses
  1. Choose a large wooden cutting board or marble platter (at least 18x12 inches). Start by placing 2 or 3 small ceramic ramekins or bowls across the board in an asymmetrical triangle pattern. Fill these with green olives, fig spread, and honey.
  2. Position the main cheeses around the bowls: place the whole brie wheel near one edge, cut a few rustic wedges from the sharp cheddar and fan them out, stack smoked gouda triangles, and lay the cranberry-coated goat cheese log horizontally.
Step 2: Add Meats & Flowing Cracker Rivers
  1. Fold thinly sliced halal beef bresaola or cured beef into accordion ribbons or roll them into rosettes and place adjacent to the cheeses.
  2. Create "cracker rivers" by fanning assorted artisan crackers and toasted baguette slices in curved, flowing lines between the bowls and cheeses. This builds dramatic visual movement across the board.
Step 3: Fill with Autumn Produce & Garnish
  1. Tuck clusters of red seedless grapes, sliced fresh figs, and crisp apple slices into the open spaces on the board. Make sure the cut faces of the figs face upward to display their stunning pink centers.
  2. Fill every remaining tiny gap with spiced candied pecans and ruby pomegranate seeds to give the board that coveted, abundant "overflowing feast" look.
  3. Tuck fresh sprigs of rosemary and small dried bay leaves into the corners for an herbal pine aroma and festive autumn color. Serve with small cheese knives and spreaders!
