Vegetables
  • 2 medium eggplants sliced
  • 2 medium zucchini sliced
  • 4 medium potatoes sliced
  • 1 cup tomato sauce
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon olive oil

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants, zucchini, and potatoes.
  3. In a baking dish, layer the sliced vegetables, starting with potatoes, followed by zucchini and eggplants.
  4. Sprinkle minced garlic, salt, and pepper over the layers.
  5. Pour tomato sauce over the layered vegetables and drizzle with olive oil.
  6. Cover with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes until the top is golden.
