Ingredients
  

For the Chili
  • 2 cups Chili Beans
  • 1 cup Diced Tomatoes
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
For the Carrot Dogs
  • 4 large Carrots peeled and cut into hot dog shapes
  • 1 tablespoon Olive Oil
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Prepare the Chili
  1. In a pot, combine chili beans, diced tomatoes, chili powder, cumin, and garlic powder. Simmer for 20 minutes.
Prepare the Carrot Dogs
  1. Toss the carrot hot dogs in olive oil, smoked paprika, salt, and pepper. Grill for 10-15 minutes until tender.
Assemble
  1. Serve the grilled carrot dogs topped with the chili mixture.
