Ingredients
  

Crepe Batter
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon sugar
  • 1 pinch salt
Cheese Filling
  • 1 cup ricotta cheese
  • 1/2 cup cream cheese
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
Topping
  • 1/2 cup sour cream
  • 1/4 cup powdered sugar
  • 1 cup fresh berries

Method
 

Make the Crepe Batter
  1. In a mixing bowl, whisk together flour, milk, eggs, sugar, and salt until smooth.
Cook the Crepes
  1. Heat a frying pan over medium heat and lightly grease it. Pour in a small amount of batter and swirl to coat the pan. Cook until the edges start to lift, then flip and cook for another minute.
Prepare the Cheese Filling
  1. In a bowl, mix together ricotta cheese, cream cheese, sugar, vanilla extract, and egg yolk until well combined.
Assemble the Blintzes
  1. Place a spoonful of cheese filling in the center of each crepe, fold the sides over, and roll up tightly.
Cook the Blintzes
  1. In the same frying pan, cook the filled blintzes until golden brown on both sides.
Serve
  1. Serve warm with sour cream, powdered sugar, and fresh berries on top.
