Ingredients
  

Crispy Rice
  • 2 cups Sushi Rice cooked and cooled
  • 1 cup Vegetable Oil for frying
Spicy Tuna Mixture
  • 1 cup Sushi-grade Tuna finely diced
  • 2 tablespoons Mayonnaise preferably Kewpie
  • 1 teaspoon Sriracha adjust to taste
  • 1 teaspoon Soy Sauce
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Green Onions chopped
Garnish
  • 1 tablespoon Sesame Seeds toasted
  • 1 tablespoon Microgreens

Method
 

Prepare the Rice
  1. Cook sushi rice according to package instructions and let it cool.
  2. Once cooled, form the rice into small rectangular shapes.
Fry the Rice
  1. Heat vegetable oil in a frying pan over medium heat.
  2. Fry the rice shapes until golden and crispy on both sides.
Prepare the Tuna Mixture
  1. In a mixing bowl, combine diced tuna, mayonnaise, Sriracha, soy sauce, sesame oil, and green onions.
  2. Mix well until all ingredients are combined.
Assemble the Dish
  1. Top each crispy rice piece with a generous spoonful of the spicy tuna mixture.
  2. Garnish with toasted sesame seeds and microgreens.
