  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp pepper

Method
 

Cooking Instructions
  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Add the diced sweet potatoes, bell pepper, onion, and garlic to the skillet.
  3. Cook for about 10 minutes, stirring occasionally, until the sweet potatoes are tender.
  4. Stir in the black beans, corn, chili powder, cumin, salt, and pepper.
  5. Cook for an additional 5-10 minutes until everything is heated through.
