Ingredients
  

Chicken and Seasoning
  • 1 lb chicken breast diced
  • 1 tbsp olive oil
  • 1 tbsp southwest seasoning
Vegetables
  • 1 cup black beans rinsed and drained
  • 1 cup corn canned or frozen
  • 1 cup bell pepper diced
  • 1 cup red onion diced
  • 1 cup cherry tomatoes halved
Toppings
  • 1 avocado sliced
  • 1 cup cilantro chopped
  • 1 cup sour cream

Method
 

Cooking the Chicken
  1. Heat olive oil in a skillet over medium heat. Add diced chicken and southwest seasoning. Cook until chicken is browned and cooked through, about 7-10 minutes.
Preparing the Vegetables
  1. In a separate bowl, combine black beans, corn, bell pepper, red onion, and cherry tomatoes.
Assembling the Bowls
  1. In serving bowls, layer the cooked chicken and vegetable mixture. Top with sliced avocado, chopped cilantro, and a dollop of sour cream.
