S’mores Cracker Cookies

Ingredients
  

Cookie Base
  • 1 cup graham cracker crumbs
  • 1/2 cup butter melted
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup flour
S'mores Filling
  • 1 cup chocolate chips
  • 1 cup marshmallows mini

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, egg, vanilla extract, and flour.
  3. Mix until well combined and form a dough.
  4. Line a baking sheet with parchment paper and scoop dough onto the sheet.
  5. Flatten the dough slightly and bake for 10 minutes.
  6. Remove from the oven and immediately sprinkle chocolate chips and mini marshmallows on top.
  7. Return to the oven for an additional 2-3 minutes until the marshmallows are slightly toasted.
  8. Allow to cool before serving.
