Ingredients
  

Rice and Base Ingredients
  • 2 cups long-grain parboiled rice
  • 1 cup tomato puree
  • 1 cup chicken broth
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
Spices and Seasoning
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Vegetables
  • 1 cup mixed vegetables frozen or fresh
  • 1 medium bell pepper chopped

Method
 

Cooking the Base
  1. In a large pot, heat oil and sauté onions, garlic, and ginger until fragrant.
  2. Add tomato puree and cook for about 10 minutes until thickened.
Cooking the Rice
  1. Add the rice, chicken broth, and spices to the pot. Stir well.
  2. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes.
  3. Add mixed vegetables and bell pepper, stir, and cook for an additional 5 minutes.
