Ingredients
  

Potatoes
  • 2 pounds potatoes Yukon Gold or red potatoes work well
Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard Dijon or yellow
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
  • 1 cup chopped celery
  • 1 cup chopped green onions

Method
 

Prepare the Potatoes
  1. Boil the potatoes in salted water until tender, about 30 minutes.
  2. Drain and let cool slightly.
  3. Smash the potatoes with a masher, leaving some chunks.
Make the Dressing
  1. In a mixing bowl, combine mayonnaise, mustard, salt, and pepper.
  2. Add chopped celery and green onions to the dressing.
Combine
  1. Fold the smashed potatoes into the dressing until well combined.
  2. Serve chilled or at room temperature.
