  • 2 lbs chicken thighs boneless, skinless
  • 1 cup carrots sliced
  • 1 cup potatoes diced
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 3 tablespoons soy sauce
  • 1 tablespoon gochugaru Korean red pepper flakes
  • 1 tablespoon sesame oil
  • 4 cups chicken broth

Method
 

Preparation
  1. Place the chicken thighs in the slow cooker.
  2. Add the carrots, potatoes, onion, garlic, and ginger.
  3. Pour in the soy sauce, gochugaru, sesame oil, and chicken broth.
  4. Stir to combine all ingredients.
Cooking
  1. Cover and cook on low for 4-6 hours or until chicken is tender.
  2. Shred the chicken with two forks and stir back into the stew.
  3. Serve hot, garnished with green onions if desired.
