  • 1 cup Arborio rice
  • 4 cups Chicken or vegetable broth Warm
  • 1 small Onion Finely chopped
  • 2 tablespoons Olive oil
  • 1 cup White wine Optional
  • 1 pinch Saffron threads Soaked in warm broth
  • 1/2 cup Parmesan cheese Grated
  • Salt To taste
  • Pepper To taste

Method
 

Cooking Instructions
  1. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the Arborio rice and stir for a couple of minutes until the rice is slightly toasted.
  3. Pour in the white wine (if using) and let it absorb completely.
  4. Begin adding the warm broth, one ladle at a time, stirring frequently until each addition is absorbed before adding more.
  5. After about 15-20 minutes, when the rice is creamy and al dente, stir in the saffron and Parmesan cheese.
  6. Season with salt and pepper to taste, and serve hot.
