Roasted Rosemary Sweet Potato Crostini with Candied Pecans

Ingredients
  

  • 2 medium sweet potatoes scrubbed and cut into 1/3-inch thick rounds
  • 2 tbsp extra virgin olive oil divided
  • 1.5 tbsp fresh rosemary leaves finely chopped
  • 0.5 tsp sea salt and freshly cracked black pepper
  • 1 long French baguette sliced diagonally into 1/2-inch rounds (about 20-24 slices)
  • 6 oz fresh goat cheese (chevre) softened at room temperature
  • 2 oz cream cheese softened
  • 1 tbsp pure honey
  • 0.5 cup candied pecans or glazed walnuts roughly chopped
  • 3 tbsp wildflower honey or hot honey warmed for drizzling
  • 0.25 cup fresh pomegranate arils optional for ruby festive sparkle

Method
 

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. Roast the Sweet Potatoes: Toss sweet potato slices with 1.5 tbsp olive oil, chopped fresh rosemary, salt, and black pepper. Arrange in a single layer on the baking sheet. Roast for 20 to 22 minutes, flipping halfway, until golden-brown, caramelized, and fork-tender.
  3. Toast the Crostini: Arrange baguette slices on a second baking sheet. Brush lightly with remaining olive oil and bake at 400°F for 7 to 9 minutes until golden and crisp.
  4. Whip the Goat Cheese: In a small bowl using a hand mixer or fork, whip the goat cheese, cream cheese, and 1 tbsp honey until light, fluffy, and spreadable.
  5. Assemble Crostini: Spread a generous layer of whipped goat cheese over each toasted baguette round. Place one warm roasted rosemary sweet potato round on top.
  6. Garnish & Drizzle: Top with chopped candied pecans, fresh pomegranate arils, and a sprinkle of tiny rosemary leaves. Generously drizzle warm honey over the top and serve warm!
