Prepare the Peaches
- Preheat the oven to 400°F (200°C). Place the halved peaches cut-side up on a baking sheet and roast for 20 minutes.
Blend the Mixture
- Once the peaches are roasted and cooled, blend them with heavy cream, sugar, and vanilla extract until smooth.
Freeze the Popsicles
- Pour the mixture into popsicle molds and freeze for at least 4 hours or until solid.
