Ingredients
  

Rice Kheer
  • 1 cup Basmati rice rinsed
  • 4 cups milk whole or full-fat
  • 1 cup sugar adjust to taste
  • 1 teaspoon cardamom powder
  • 1 tablespoon ghee for cooking
  • 1 pinch salt
Berry Compote
  • 2 cups mixed berries fresh or frozen
  • 1 tablespoon sugar optional
  • 1 tablespoon lemon juice

Method
 

Prepare Rice Kheer
  1. In a saucepan, heat ghee and add the rinsed rice. Sauté for a few minutes.
  2. Add milk and bring to a boil. Reduce heat and simmer until rice is cooked and mixture thickens.
  3. Stir in sugar, cardamom powder, and salt. Cook for a few more minutes.
Make Berry Compote
  1. In a mixing bowl, combine mixed berries, sugar, and lemon juice. Stir gently.
  2. Let it sit for about 10 minutes to allow the flavors to meld.
Serve
  1. Serve the rice kheer warm or chilled, topped with the berry compote.
