Red Wine-Poached Pear Tarte Tatin

Ingredients
  

For the Poached Pears
  • 4 medium pears peeled and cored
  • 750 ml red wine preferably a fruity variety
  • 200 g sugar for poaching
For the Tarte Tatin
  • 1 sheet puff pastry thawed
  • 100 g butter for caramelizing
  • 100 g brown sugar for caramelizing

Method
 

Poach the Pears
  1. In a saucepan, combine red wine, sugar, cinnamon stick, and cloves. Bring to a simmer.
  2. Add the peeled and cored pears to the simmering mixture. Cook until tender, about 20 minutes.
  3. Remove pears and let cool. Reserve poaching liquid.
Prepare the Tarte Tatin
  1. Preheat the oven to 190°C (375°F).
  2. In a skillet, melt butter and brown sugar over medium heat until bubbly and caramelized.
  3. Arrange the poached pears in the skillet, cut side up. Cover with puff pastry, tucking edges in.
  4. Bake in the preheated oven for 25-30 minutes or until pastry is golden brown.
  5. Let cool for a few minutes, then invert onto a serving plate.
