Ingredients
  

Salad Ingredients
  • 2 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper sliced
  • 1 cup carrots shredded
  • 1 cup red onion thinly sliced
Plantain Chips
  • 2 large plantains sliced
  • 1 cup oil for frying
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey optional
  • 1 teaspoon salt
  • 1 teaspoon pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, bell pepper, carrots, and red onion.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
Fry the Plantain Chips
  1. Heat oil in a frying pan over medium heat. Fry the sliced plantains until golden and crispy, then drain on paper towels.
Assemble the Salad
  1. Drizzle the dressing over the salad and toss to combine. Top with crispy plantain chips before serving.
