Method
Cooking the Pasta
- Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente.
- Drain the linguine in a colander and set aside.
Preparing the Sauce
- In a frying pan, heat olive oil over medium heat. Add the sliced courgettes and cook for 5 minutes until softened.
- Add the prawns and cook until they turn pink, about 3-4 minutes.
- Stir in the broad beans, salt, pepper, and lemon juice. Cook for an additional 2 minutes.
Combining and Serving
- Add the cooked linguine to the frying pan and toss everything together until well combined.
- Serve immediately, garnished with additional lemon juice if desired.
