Prawn and Courgette Linguine with Broad Bean Salad

Ingredients
  

Pasta
  • 300 g linguine
Seafood
  • 400 g prawns peeled and deveined
Vegetables
  • 2 courgettes sliced
  • 200 g broad beans fresh or frozen
Seasoning
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp lemon juice freshly squeezed

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente.
  2. Drain the linguine in a colander and set aside.
Preparing the Sauce
  1. In a frying pan, heat olive oil over medium heat. Add the sliced courgettes and cook for 5 minutes until softened.
  2. Add the prawns and cook until they turn pink, about 3-4 minutes.
  3. Stir in the broad beans, salt, pepper, and lemon juice. Cook for an additional 2 minutes.
Combining and Serving
  1. Add the cooked linguine to the frying pan and toss everything together until well combined.
  2. Serve immediately, garnished with additional lemon juice if desired.
