Ingredients
  

Cookie Base
  • 1 cup butter softened
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 large egg
Topping
  • 1 cup pineapple chunks canned or fresh
  • 1/2 cup brown sugar
  • 1/4 cup maraschino cherries

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour and baking powder, then gradually add to the wet ingredients.
  5. In a baking sheet, arrange the pineapple chunks and maraschino cherries.
  6. Sprinkle the brown sugar over the pineapple and cherries.
  7. Drop spoonfuls of the cookie dough over the topping.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow to cool before serving.
