Ingredients
  

Mushrooms
  • 1 pound Fresh mushrooms Button or cremini mushrooms work well.
Pickling Liquid
  • 1 cup White vinegar
  • 1 cup Water
  • 1 tablespoon Salt
  • 1 tablespoon Sugar
  • 1 teaspoon Black peppercorns
  • 2 cloves Garlic Smashed
  • 1 teaspoon Dried herbs Such as thyme or oregano

Method
 

Preparation
  1. Clean the mushrooms and trim the stems if necessary.
  2. In a saucepan, combine vinegar, water, salt, sugar, peppercorns, garlic, and herbs. Bring to a boil.
  3. Add the mushrooms to the boiling liquid and simmer for 5 minutes.
  4. Remove from heat and let cool before transferring to a jar.
  5. Refrigerate for at least 24 hours before enjoying.
