Dressing
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. In a large bowl, combine the stale bread, tomatoes, cucumber, red onion, and basil.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Let the salad sit for about 15 minutes to allow the flavors to meld before serving.
