Ingredients
  

Salad Base
  • 1 cup Puy lentils Rinsed
  • 1 cup Pearl barley Rinsed
  • 2 medium Oranges Peeled and segmented
  • 4 large Eggs Boiled
Dressing
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Prepare the Ingredients
  1. Rinse the puy lentils and pearl barley under cold water.
  2. Peel and segment the oranges.
  3. Boil the eggs until hard-boiled, then cool and peel.
Cook the Base
  1. In a pot, combine puy lentils and pearl barley with water. Bring to a boil and simmer until tender.
Assemble the Salad
  1. In a bowl, combine the cooked lentils and barley with orange segments.
  2. Whisk together olive oil, lemon juice, honey, salt, and pepper. Pour over the salad and toss to combine.
  3. Slice the boiled eggs and place on top of the salad before serving.
