Ingredients
  

Cake Layers
  • 4 large eggs room temperature
  • 100 grams sugar
  • 100 grams almond flour
  • 30 grams all-purpose flour
  • 30 grams unsalted butter melted
Coffee Buttercream
  • 200 grams unsalted butter softened
  • 250 grams powdered sugar
  • 2 tablespoons coffee strong brewed
Chocolate Ganache
  • 200 grams dark chocolate chopped
  • 100 milliliters heavy cream

Method
 

Prepare Cake Layers
  1. Preheat the oven to 180°C (350°F). Grease and line the baking pan.
  2. In a mixing bowl, whisk the eggs and sugar until pale and fluffy.
  3. Gently fold in the almond flour and all-purpose flour.
  4. Pour the batter into the prepared pan and bake for 20-25 minutes.
  5. Let the layers cool completely before assembling.
Make Coffee Buttercream
  1. Beat the softened butter until creamy.
  2. Gradually add the powdered sugar and mix until combined.
  3. Add the brewed coffee and mix until smooth.
Prepare Chocolate Ganache
  1. Heat the heavy cream in a saucepan until just boiling.
  2. Pour the hot cream over the chopped chocolate and let sit for a few minutes.
  3. Stir until the chocolate is completely melted and smooth.
Assemble the Cake
  1. Layer the first cake layer on a serving plate and spread with coffee buttercream.
  2. Repeat with the second layer and top with chocolate ganache.
  3. Finish with the final layer and refrigerate for at least 2 hours before serving.

Notes
