Ingredients
  

Ice Cream Base
  • 2 cups heavy cream
  • 1 cup sweetened condensed milk
  • 1/2 cup rum
  • 1 cup raisins soaked in rum
Glazed Pineapple
  • 1 cup pineapple chunks fresh or canned
  • 2 tablespoons brown sugar
  • 1 tablespoon butter

Method
 

Prepare Ice Cream
  1. In a mixing bowl, whisk together the heavy cream and sweetened condensed milk until well combined.
  2. Fold in the rum and soaked raisins.
  3. Transfer the mixture to a freezer-safe container and freeze for at least 4 hours or until firm.
Glaze Pineapple
  1. In a skillet, melt the butter over medium heat.
  2. Add the pineapple chunks and brown sugar, cooking until the pineapple is caramelized, about 5-7 minutes.
Serve
  1. Scoop the no-churn ice cream into bowls and top with the glazed pineapple.
