Ingredients
  

Lentils and Rice
  • 1 cup green or brown lentils
  • 1 cup long-grain rice
  • 4 cups water
  • 2 tablespoons olive oil
  • 2 medium onions sliced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Cooking the Lentils and Rice
  1. Rinse the lentils and rice under cold water.
  2. In a pot, combine lentils, water, cumin, salt, and pepper. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes.
  4. Add rice to the pot and stir. Cover and cook for an additional 15 minutes or until rice is tender.
  5. In a pan, heat olive oil and sauté sliced onions until caramelized.
  6. Serve the lentils and rice topped with caramelized onions.
