Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
Filling
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup chocolate chips, melted

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture into the bottom of a muffin tin to form the crust.
Make the filling
  1. In a mixing bowl, beat the cream cheese and sugar until smooth. Add vanilla extract and mix well.
  2. Add eggs one at a time, mixing well after each addition. Stir in melted chocolate chips.
Bake
  1. Pour the filling over the crust in the muffin tin. Bake for 20-25 minutes or until set.
  2. Allow to cool before removing from the tin.
