Prepare the Beef Filling
- Heat olive oil in a skillet over medium heat. Add chopped mushrooms and sauté until they are soft.
- Add the beef pieces and cook until browned. Stir in Dijon mustard and remove from heat.
Assemble the Bites
- Roll out the puff pastry and cut into squares. Place a spoonful of the beef filling in the center of each square.
- Fold the pastry over the filling and seal the edges. Brush the tops with beaten egg.
Bake
- Preheat the oven to 400°F (200°C). Place the bites on a baking sheet and bake for 15-20 minutes or until golden brown.
