  • 1 lb chicken breast diced
  • 1 cup rice uncooked
  • 4 cups chicken broth
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup diced tomatoes canned
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp olive oil
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 2 cloves garlic minced

Method
 

Cooking Steps
  1. Heat olive oil in a soup pot over medium heat. Add diced onions and bell peppers, sauté until soft.
  2. Add minced garlic and cook for another minute.
  3. Stir in the diced chicken and cook until no longer pink.
  4. Add the rice, chicken broth, diced tomatoes, black beans, corn, cumin, chili powder, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until rice is tender.
  6. Serve hot, garnished with fresh cilantro if desired.
