Ingredients
  

For the Pozole
  • 6 cups Chicken broth
  • 2 cups Hominy canned or dried
  • 1 cup Chopped onion
  • 2 cloves Garlic minced
  • 1 tablespoon Oregano dried
  • 1 teaspoon Cumin
For the Matzo Balls
  • 1 cup Matzo meal
  • 4 large Eggs
  • 1/4 cup Water
  • 1/4 cup Vegetable oil

Method
 

Prepare the Pozole
  1. In a large pot, combine chicken broth, hominy, onion, garlic, oregano, cumin, salt, and pepper. Bring to a boil.
  2. Reduce heat and let simmer for 30 minutes.
Make the Matzo Balls
  1. In a mixing bowl, whisk together matzo meal, eggs, water, vegetable oil, and salt until well combined.
  2. Refrigerate the mixture for 30 minutes.
  3. Form the mixture into balls and drop them into the simmering pozole.
  4. Cook for an additional 20 minutes until matzo balls are cooked through.
Serve
  1. Ladle the pozole into bowls and serve hot.
