Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/2 cup butter cold and cubed
  • 1/4 cup sugar
  • 1 large egg yolk
  • 2-3 tablespoons cold water
Filling
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1 cup water
  • 3 large egg yolks
  • 1/2 cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • 1 tablespoon butter
Meringue
  • 3 large egg whites
  • 1/4 cup sugar
  • 1/4 teaspoon cream of tartar

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, butter, and sugar until crumbly. Add egg yolk and cold water, mix until dough forms. Roll out and place in pie dish.
  2. Bake the crust for 15 minutes or until golden. Remove from oven and let cool.
Make the Filling
  1. In a saucepan, combine sugar and cornstarch. Gradually whisk in water and cook over medium heat until thickened. Remove from heat.
  2. Whisk in egg yolks, lemon juice, lemon zest, and butter. Pour the filling into the baked crust.
Prepare the Meringue
  1. In a mixing bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and continue beating until stiff peaks form.
  2. Spread meringue over the lemon filling, sealing the edges. Bake for an additional 10 minutes or until meringue is golden.
