Ingredients
  

Beans and Rice
  • 1 cup red beans soaked overnight
  • 1 cup rice white or brown
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Preparation
  1. Soak the red beans overnight in water.
  2. Chop the onion and mince the garlic.
Cooking
  1. Add soaked beans, rice, chopped onion, minced garlic, cumin, paprika, vegetable broth, salt, and pepper to the slow cooker.
  2. Stir to combine all ingredients.
  3. Cover and cook on low for 4-6 hours or until beans are tender.
