Ingredients
  

Crust
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1 teaspoon salt
  • 1/4 cup fresh herbs chopped
  • 1/4 cup ice water
Filling
  • 3 large onions sliced
  • 2 cups gruyere cheese shredded
  • 1 cup cream
  • 1 teaspoon thyme dried
  • 1 teaspoon black pepper

Method
 

Prepare the Crust
  1. In a mixing bowl, combine flour, salt, and herbs. Add cold butter and mix until crumbly. Stir in ice water until dough forms.
  2. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Prepare the Filling
  1. In a skillet, sauté onions over medium heat until caramelized, about 20 minutes.
  2. Add thyme, black pepper, and cream to the onions, stirring to combine.
Assemble and Bake
  1. Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface.
  2. Place the rolled dough on a baking sheet, fill with the onion mixture, and sprinkle with gruyere cheese.
  3. Fold the edges of the dough over the filling and bake for 25-30 minutes until golden brown.
