Ingredients
  

Marinade
  • 1 cup fresh cilantro chopped
  • 2 tablespoons lime juice
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger grated
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon salt
  • 1 pound chicken breasts cut into pieces
For Cooking
  • 2 tablespoons oil for frying
  • 1 cup onion chopped
  • 1 cup tomatoes chopped

Method
 

Marinating Chicken
  1. In a bowl, combine cilantro, lime juice, garlic, ginger, cumin, coriander, and salt. Add chicken pieces and mix well. Marinate for at least 30 minutes.
Cooking
  1. Heat oil in a skillet over medium heat. Add chopped onions and sauté until golden brown.
  2. Add marinated chicken and cook until browned and cooked through.
  3. Stir in chopped tomatoes and cook for an additional 10 minutes.
