Ingredients
  

Mushrooms and Meat
  • 500 grams chanterelle mushrooms
  • 200 grams speck or pancetta
Vegetables
  • 2 medium onions sliced
  • 3 cloves garlic minced
  • 2 medium potatoes cubed
Herbs and Spices
  • 1 teaspoon thyme dried
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Fats
  • 2 tablespoons olive oil
  • 1 tablespoon butter

Method
 

Cooking the Base
  1. Heat olive oil and butter in a skillet over medium heat.
  2. Add sliced onions and cook until translucent.
  3. Stir in minced garlic and cook for an additional minute.
Adding Ingredients
  1. Add cubed potatoes and cook until they start to soften.
  2. Incorporate speck and cook until crispy.
  3. Finally, add chanterelle mushrooms and thyme, cooking until mushrooms are tender.
Seasoning and Serving
  1. Season with salt and black pepper to taste.
  2. Serve hot, garnished with fresh herbs if desired.
