Ingredients
  

Chicken Marinade
  • 1 lb chicken breast cut into cubes
  • 1 cup plain yogurt preferably low-fat
  • 2 tbsp tandoori spice mix
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
Vegetables
  • 1 bell pepper cut into chunks
  • 1 onion cut into chunks
  • 1 zucchini cut into chunks

Method
 

Marinate Chicken
  1. In a mixing bowl, combine yogurt, tandoori spice mix, lemon juice, olive oil, salt, and pepper.
  2. Add chicken cubes to the marinade and mix well. Cover and refrigerate for at least 1 hour.
Prepare Kebabs
  1. Soak skewers in water for 30 minutes if using wooden skewers.
  2. Thread marinated chicken and vegetables onto skewers.
Grill Kebabs
  1. Preheat grill to medium-high heat.
  2. Grill kebabs for about 15-20 minutes, turning occasionally, until chicken is cooked through.
