Ingredients
  

Pork Tenderloin
  • 1 lb Pork Tenderloin Trimmed
Peach Glaze
  • 1 cup Peach Preserves
  • 2 tbsp Soy Sauce
  • 1 tbsp Apple Cider Vinegar
Orange Habanero Mojo
  • 1 medium Habanero Pepper Seeded and chopped
  • 1 cup Fresh Orange Juice
  • 2 tbsp Olive Oil
  • 2 cloves Garlic Minced
  • 1 tsp Cumin
  • 1 tsp Salt

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine peach preserves, soy sauce, and apple cider vinegar to create the peach glaze.
  2. In another bowl, mix habanero pepper, orange juice, olive oil, garlic, cumin, and salt to make the mojo sauce.
Marinate the Pork
  1. Place the pork tenderloin in a resealable bag and pour the peach glaze over it. Seal and marinate in the refrigerator for at least 30 minutes.
Grill the Pork
  1. Preheat the grill to medium-high heat. Remove the pork from the marinade and grill for about 20 minutes, turning occasionally, until the internal temperature reaches 145°F.
Serve
  1. Let the pork rest for 5 minutes before slicing. Serve with the orange habanero mojo drizzled on top.

Notes

For a spicier kick, leave some seeds in the habanero pepper.
