Ingredients
  

Chicken and Marinade
  • 4 pieces chicken breasts boneless and skinless
  • 1/4 cup soy sauce for marinade
  • 2 tablespoons honey for marinade
  • 1 tablespoon olive oil for marinade
  • 1 teaspoon garlic powder for marinade
  • 1 teaspoon ginger grated, for marinade
Pineapple
  • 1 cup pineapple chunks fresh or canned
Coconut Rice
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1 teaspoon salt
Garnish
  • 1/4 cup cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine soy sauce, honey, olive oil, garlic powder, and grated ginger.
Marinate the Chicken
  1. Add chicken breasts to the marinade and let sit for at least 30 minutes.
Cook the Rice
  1. In a rice cooker, combine jasmine rice, coconut milk, water, and salt. Cook according to rice cooker instructions.
Grill the Chicken
  1. Preheat the grill and cook marinated chicken for about 6-7 minutes on each side until fully cooked.
Assemble the Bowls
  1. In bowls, layer coconut rice, grilled chicken, and pineapple chunks. Garnish with cilantro and lime wedges.
