Ingredients
  

Chicken
  • 4 pieces chicken breasts boneless and skinless
  • 1 tablespoon chipotle sauce for marinating
Vegetables
  • 2 large bell peppers any color, sliced
  • 1 cup mixed greens
  • 1 medium red onion sliced
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey

Method
 

Prepare Chicken
  1. Marinate the chicken breasts in chipotle sauce for at least 30 minutes.
  2. Grill the chicken over medium heat for about 6-7 minutes on each side until cooked through.
Grill Peppers
  1. Grill the sliced bell peppers until charred and tender, about 5-6 minutes.
Assemble Salad
  1. In a large mixing bowl, combine the grilled chicken, grilled peppers, mixed greens, and red onion.
  2. Whisk together olive oil, lime juice, and honey to make the dressing, then pour over the salad and toss to combine.
