Ingredients
  

Vegetables
  • 2 medium zucchini grated
  • 1 medium onion finely chopped
  • 1 cup spinach chopped
Binders
  • 1 cup feta cheese crumbled
  • 1 large egg
  • 1 cup breadcrumbs
Seasonings
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon oregano dried
Oil
  • 2 tablespoons olive oil for frying

Method
 

Preparation
  1. Grate the zucchini and squeeze out excess moisture.
  2. In a mixing bowl, combine grated zucchini, onion, spinach, feta cheese, egg, breadcrumbs, salt, pepper, and oregano.
  3. Mix until well combined.
Cooking
  1. Heat olive oil in a frying pan over medium heat.
  2. Form the mixture into patties and fry for about 3-4 minutes on each side until golden brown.
  3. Remove from pan and place on paper towels to drain excess oil.
