Ingredients
  

Vegetables
  • 1 cup cucumber diced
  • 1 cup tomatoes diced
  • 1 cup bell pepper diced
  • 1 cup red onion finely chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon oregano dried
  • to taste salt
  • to taste pepper
Toppings
  • 1/2 cup feta cheese crumbled
  • 1/4 cup black olives sliced

Method
 

Preparation
  1. Chop all the vegetables and place them in a mixing bowl.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Pour the dressing over the chopped vegetables and toss to combine.
  4. Top with crumbled feta cheese and sliced black olives.
  5. Serve immediately or refrigerate for later.
