Prepare the Mofongo
- Boil the plantains in salted water until tender, about 15 minutes.
- Drain and mash the plantains with garlic, olive oil, and chicken broth until smooth.
- Form the mashed plantains into a ball or mound.
Cook the Shrimp
- In a skillet, heat olive oil over medium heat.
- Add garlic and sauté until fragrant.
- Add shrimp, paprika, salt, and pepper, cooking until shrimp are pink and cooked through.
Serve
- Place the mofongo on a plate and top with garlic shrimp.
- Serve immediately.
